Nicole's Favorite Recipe: Quinoa Banana Bread
I love banana breads! That's why when I found this recipe, I just had to make it! It's as easy as making regular banana bread but with more fiber! :D Enjoy
Quinoa Banana Bread
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 60 minutes
Ingredients
2 Cups Flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 eggs, lightly beaten
3 Medium bananas, mashed
1 Cup sugar
1/2 Cup butter, melted
1 Cup cooked quinoa, cooled
Instructions
Measure dry ingredients into a bowl and mix together.
In another bowl. mix eggs, bananas, sugar, and butter.
Mix in dry ingredients
Mix in quinoa
Spray loaf pans. I used 3 mini loaf pans but you could use 1 large (regular sized) loaf pan.
Bake at 350 for 45-50 minutes. If using large pan add 10 minutes.
