Nicole's Favorite Recipe: Quinoa Banana Bread


I love banana breads! That's why when I found this recipe, I just had to make it! It's as easy as making regular banana bread but with more fiber! :D Enjoy

Quinoa Banana Bread

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 60 minutes

Ingredients

  • 2 Cups Flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 2 eggs, lightly beaten

  • 3 Medium bananas, mashed

  • 1 Cup sugar

  • 1/2 Cup butter, melted

  • 1 Cup cooked quinoa, cooled

Instructions

  1. Measure dry ingredients into a bowl and mix together.

  2. In another bowl. mix eggs, bananas, sugar, and butter.

  3. Mix in dry ingredients

  4. Mix in quinoa

  5. Spray loaf pans. I used 3 mini loaf pans but you could use 1 large (regular sized) loaf pan.

  6. Bake at 350 for 45-50 minutes. If using large pan add 10 minutes.
